<i>Milk kefir grains</i> (MKG) tu bukanlah bijirin ya, tapi disebut <i>grains </i>disebabkan rupanya berkelompok gitu. </div>

MKG adalah simbiosis koloni bakteria dan yis yang amat bagus untuk sistem penghadaman kita. </div>

Aku dapat MKG daripada kenalan/sahabat yang sama-sama berkursus MBfPC dulu. Dia pun dapat daripada kawannya. Begitulah dunia probiotik ni, sebab <i>grains/scoby</i> akan membiak setiap kali proses <i>fermentation</i>, maka lama-lama stok tu banyak. <i>So,</i> bolehlah tanya-tanya dan minta pada sesiapa yang ada ;-).</div>

Cara penyediaan <i>milk kefir </i>sangat senang. Tidak seperti yogurt yang melibatkan <i>heating process, milk kefir</i> tidak begitu. </div>

1) Letakkan MKG di dasar botol/balang kaca. Tuangkan susu dari sisi balang kaca, seeloknya elakkan tuang susu terus/<i>direct </i>ke atas MKG. Biasanya aku guna 1 L susu <i>Farm Fresh </i>untuk 1 sudu besar MKG. </div>

2) Tutup balang dengan kain yang bersih. Proses menghasilkan <i>milk kefir </i>adalah proses yang memerlukan oksigen. Letakkan balang pada suhu bilik selama 20-24 jam. </div>

Pada masa ini, bakteria <i>Lactobacillus</i> dalam MKG akan bertindak ke atas gula susu iaitu laktosa dan menukarkannya kepada asid laktik, manakala yis dalam MKG akan bertindak menukarkan laktosa kepada ethanol dan karbon dioksida. </div>

3) Setelah 20-24 jam (<i>fermentation period</i> bergantung pada suhu bilik), rupa <i>milk kefir</i> seperti gambar di bawah. Semasa proses fermentasi, ada sesetengah MKG yang akan terapung di permukaan bersama-sama dengan <i>cream. </i></div>
